Prosecco Superiore DOCG Extra Dry
Valdobbiadene area is characterized by steep hills, where the harvest is done by hand. The rich diversity of microclimates and the complex geologic characteristics of this area make it one of the best terroirs for Glera grape variety and for the production of Prosecco.
Our estate, Collagù, is located on the steep side of a hill, enriched by various plants of different species. The soil is composed of clay, sandstone and marl and was originated by the lifting of the prehistoric seabed. This features are the ideal bases for the production of elegant and mellow wines. This tiny hillside has a fresh climate and a good diurnal temperature variation that makes the wine’s perfumes fresh and intense.
The first fermentation takes place after the grapes are pressed. The second fermentation takes place once the wine has been stabilized, using fresh must and the Charmat method. This process lasts at least 8 weeks, in order to obtain a fine perlage.
